The origins of a coconut palm are not exactly known. It can only be assumed that it comes from Polynesia or south-eastern Asia. Coconut can travel many thousands of kilometers without losing its ability to sprout. Thanks to this ability, it has spread all over the world in tropical areas. Its name originates from Spanish coco – ghost, apparition. Perhaps it looked odd to the Spanish because of three depressions in its shell.


The coconut tree belongs to the family of palms. It usually reaches a maximum of 30 metres. Big, feathery leaves reach the length of 6 metres maximum. The inflorescence consists of hundreds of male and only a few female flowers which, when pollinated, grow into fruit  that matures for 12-15 months. In spite of appearances, the coconut is not a nut from a botanic point of view – it is a drupe (a caryopsis according to some experts). It is round or slightly egg-shaped, 25 cm long and weighs 8 kg maximum.


In Sanskrit, the coconut palm is known as ”kalpavriksha” which means ”a tree that provides everything needed for life”, in Malay language it is known as ”pokokseribuguna” which means ”a tree of thousand uses”, in Philippines it is called ”the tree of life”, and the inhabitants of the Pacific Islands say that the coconut is ”a cure for all diseases”.


The coconut is one of the most precious gifts of nature. We get flesh from the fruit (called also ”cellular endosperm”), juice (called ”coconut water” or ”coconut milk”) and coconut oil.


The coconut flesh is white and succulent. After drying it out, the so-called ”copra” is obtained which contains 70% of fat, 14% of sugar and 7% of protein. The flesh consists mainly of saturated fatty acids. These acids, however, are not the same as the ones contained in e.g. meat or dairy, but acids of a medium length of an atomic chain (8-12 atoms) which makes them easier to digest and assimilate.


The coconut water is inside the fruit. Before the water gets inside the nut and becomes a coconut milk, it has to travel a long way from the soil through the whole trunk to finally reach the fruit. During this trip, it is filtered many times, therefore it doesn’t contain any impurities and can be regarded as immaculately clean till the moment of opening the nut. The milk in a young coconut has nearly identical composition to human blood plasma. During the World War 2, it was used as a liquid for transfusion when there was no natural blood available. Therefore, the coconut is ”a natural blood donor”. This method is still used in underdeveloped countries. The coconut water mixes easily with blood and is assimilated quickly by a human organism. It is used intravenously in the form of drips as a substitute for physiologic saline that hydrates the body and restores the deficiency of electrolytes. However, it has to be transfused straight from the fruit because this is the only way to keep its sterility. The coconut water is one of the richest sources of electrolytes. It contains more of them than most of isotonic drinks used by sport professionals. It also contains more potassium than bananas. It is recommended when suffering from diarrhoea, vomiting and stomach problems.


The coconut oil  (coconut butter, coconut fat) – the oil received by pressing and heating copra – the hard flesh of the coconuts (CocosNucifera). Most often, it is refined, de-acidified and whitened. At the temperature of about 21-25 degrees Celsius, it looks as set, white fat (that is why it is called the coconut butter).
